Patisserie that takes no shortcuts
Since 1990 we have been making patisserie in Warsaw that takes no shortcuts. Now we make it for you - for a café that takes coffee as seriously as we take dessert.
This offer wasn't created at a desk. It was created at the bar - from asking what a specialty café counter really lacks. The answer was simple: desserts that don't drown out the coffee, but talk to it.
That's why our desserts are less sweet than you're used to.
We treat sugar like salt - it should bring out the flavour, not be the flavour.
Instead, we work with acidity (yuzu, passion fruit, raspberry), bitterness (matcha, dark chocolate, coffee) and umami (miso, tahini, brown butter) - exactly the registers good coffee moves in.
No compromises on ingredients: real pistachio paste, not flavouring. A real vanilla pod, not vanillin. Butter, 36% cream, couverture chocolate, fruit in season - and out of season we honestly tell you something isn't available, instead of faking strawberries in February.
Every dessert has its own product sheet with a photo and the full ingredient list. We don't hide ingredients - not from you, and not from your café's guests. You can keep the sheet by the counter, file it in your allergen binder or show it to a guest who asks. Honest ingredients are part of quality.
We bake in Warsaw and deliver across Warsaw and the surrounding area. A short trip, fresh desserts, right in the neighbourhood.

Flavour philosophy
Why these flavours and not others?
Every profile in this catalogue passed the same test: does it hold its own next to an espresso made from light-roast beans? Specialty coffee has acidity, fruity sweetness and a long finish - a dessert that is only sweet flattens it to nothing. That's why:
Acidity balances cream.
Yuzu, lemon, passion fruit, blackcurrant and raspberry cut through richness and cleanse the palate before the next sip.
For example
yuzu · passion fruit · blackcurrant · raspberry
Try: Lemon - yuzu tart with torched meringueUmami adds depth.
Miso in caramel, tahini in chocolate, brown butter in the dough - savoury, salty notes that make a dessert taste "grown-up" and keep it interesting past the third spoonful.
Bitterness connects.
Matcha, tonka, dark chocolate and coffee itself build a bridge between the plate and the cup.
The season sets the menu.
Some items rotate with the seasons - just like the beans in your grinder.
You won't find "candy bar" flavours here. What you will find are ingredients your guests haven't seen anywhere else - and will ask about.
A guest who asks is a guest who comes back.
With every dessert we suggest which coffee to recommend it with - your barista has the answer ready before the guest asks.
