
Plant-based cooking is a new lifestyle for me. A lot has changed since I stopped eating meat during my pregnancy, exactly one year ago. Initially, my motivation was only health issues, followed by ecological considerations and, of course, animal rights.
Since a plant-based diet is a solution that benefits everyone, today I feel that by cooking vegan for family and friends I am emphasizing the values that are important to me. It is a spark that motivates me to work. I feel fulfilled because I am finally making a positive gesture in all the areas that are important to me.
When creating a menu, I always use products that are close to my heart: those that are always present in my fridge. I believe that they add an extraordinary flavor to plant-based dishes, and they replace meat cuisine and its flavors 110%. Spices are the basis of vegan cuisine.
My gastronomic "I" was born on specific textures and flavors that I cannot live without. I love our Polish traditions, but I want to change myself and my cuisine: to keep up with the times by creating new trends and standards in line with the evolution of the environment. I believe that the current generation of chefs also has a lot of room to show off in this regard - to depart from tradition and give gastronomy a new course.
Plant-based cuisine is exactly what I needed to satisfy my creative cravings every day, to discover flavors that make me feel like a child discovering gastronomy for the first time.
In vegan cuisine, it is also important to balance nutritional values that provide us with all the ingredients necessary for the proper functioning of the body.
I also pay a lot of attention to products that support immunity, such as ginger, turmeric, and garlic. That's why when I discovered plant-based cuisine in Vancouver, I relied on high-quality ingredients. The vegan cuisine there is very well developed, and there's no problem with their availability.
In Poland I had to do some searching, but I had a huge motivation: to bring the flavors I know well from Canada straight to Batida's kitchen. I did it!
